Just to clarify: you don't need to add "soup" to Minestrone since the word already says it. Minestra means in fact soup and the -one suffix at the end is used to sort of make it bigger. So it literally means big/large soup. Yours looks lovely and I would definitely eat 2 bowls of it, at least 😘😊

Hummus in every sandwich! I’m not vegan, but pretty much skip meats. But hummus, mustard + veggies and cheese for me.. delish!

Hummus on ANYTHING. 😂😂😂 I have it on crisps, on toast with an extra dollop of mashed garlic on top, on chips (fries for the Americans out there), as a topping on rice with sautéed mushrooms or mixed vegetables. I've even had hummus mixed into a bowl of still-warm pasta, then a splash of really really good extra virgin olive oil and crispy tofu bits instead of bacon. 😋😋😋

Check ingredients, but most prawn cocktail crisps I've found are vegan friendly!

People freaking out that Prawn Cocktail crisps dont have prawns in them.. have you ever looked at the ingredients on your crisps? 😅 Walkers Chicken crisps contain no chicken, Beef crisps contain no beef and Bacon crisps contain no bacon...! God forbid the vegetarians or vegans enjoy any of them, right?!

Skips (prawn cocktail) are vegan!! "May contain milk" generally just means it's been made in the same factory so vegans should be fine 😂

Here in Canada, Tinkyada brown rice pasta is a brilliant gluten free option, the best texture of any Ive tried. Molissiana has a decent option too, in various sizes.
